Vin Santo

Torgiano Vin Santo DOC

An amber-coloured passito wine with warm golden reflections, intense aromatic notes that recall apricots, dried figs and white jam with hints of honey and yellow flowers on the finish. The flavour presents a balanced sugar concentration with slight citrus-like acidity and intense fruity notes; it has lingering notes on the finish, with refined sweetness. If properly stored, this wine has long aging potential.

Grape varietals

Trebbiano e Grechetto; double Guyot pruning system. The grapes are hand-harvested in September and then left to dry for 3 months on trellises in ventilated conditions in order to avoid any risk of mould

Vinification

Careful grape selection after harvest, direct pressing in hydraulic vertical presses with a yield of 25%; slow fermentation in barriques. Aging takes place in oak barriques, of which 10% are new oak, for 30 months

Food pairings

aged and blue cheeses, foie gras as well as pastries and pies; an unusual pairing with speck and creamy risotto.

Anecdotes

Vin Santo is an ancient tradition in central Italy, as testified by a display at the MUVIT – Wine Museum of Torgiano – where a rich collection of wafer irons depicts the custom. Vin Santo is traditionally an ingredient in the batter used for preparing wafers that are then cooked using the traditional irons. The label depicts a detail from a 16th-century wafer iron on display at MUVIT, owned and managed by the Lungarotti Foundation.
