Vino Spumante Metodo Classico

Golden, clear and brilliant with a very fine and persistent perlage, it has an intense and enveloping bouquet that recalls almonds, hazelnuts and a hint of bread crust, with an intense floral note on the finish. The enveloping and dry flavour, fruity and with lovely structure, leaves a citrusy touch on the finish, with fresh and clean acidity.

Vinification

Classical Method: the production system is a long-term process, as it strictly follows all the canons of classical spumante production, with 30 months bottle fermentation and shaking by hand on pupitres for 40-45 days; the bottle then rests one month in the neck-down position before disgorgement and then 3 more months before release to the market

Food pairings

An excellent aperitif, it is also a great choice for continuing the entire meal. Serve at 8-10°C (46-50°F)

Anecdotes

the first vintage was 1978, released on the market in 1980. A careful selection of soils and microclimate in order to produce grapes with good acidity has resulted in a product that matches those of the more renowned production areas in terms of freshness and elegance
